If you are making red matta puttu podi then soak this for an hour and half. Drain the water and spread the washed rice on a muslin cloth to absorb all excess water for about 15-20 minutes. Grind it in the mixer grinder till the powder is a slightly coarse. Sieve the powder using a sieve with medium holes on the muslin cloth. Last step is to dry roast this powder for about 3-5 minutes before storing it. Use this podi to make puttu | 1) Take puttu podi in a wide vessel. 2) Add salt and mix well 3) Add 1 cup of water a quarter at a time and mix the flour well. The flour should be crumbly in texture but if pressed in your fist should retain the shape until crumbled 4) Leave aside for 15 minutes 5) Fill a puttu steamer with water and keep on the gas. 6) In the puttu maker first put a spoonful of grated coconut at the base. Add the moist rice mix about 4 tbsp or till it fill maybe 1 1/2 inches. Then add a layer of coconut and repeat the process. you can layer upto 4 pieces at one time 7) Steam for 8-10 min. remove from gas and with the thin rod slide it out onto a plate.
